One of those has emphasis, weight, gravitas. The other follows these capitalization guidelines.
Im not saying we shouldnt use some sort of guidelines, and this list is as good as any. Just strange that the logic behind this point feels lemming-like: someone started writing "dark side", others followed, now it's codified because a "vast majority" of writers wrote it that way. Nevermind that Dark Side of the Force is just as much as proper noun as the Force. Whatever. Congrats to whomever defeats me because I forgot to adhere to this standard.

I must admit, while Wookieepedia sticks to what's correct from an Out Of Universe non fiction perspective, I sometimes vary what I capitalise depending on who the speaker is, and what their philosophical outlook on the Force was (e.g. like how Cronal believed in "the Dark" due to his Rhandite background).
My capitalisation (at least in dialogue) is therefore prone to being inconsistent, even between two speakers talking to each other in the very same scene. :P
